Happy friday everyone! This week flew by! We thought we would introduce something a little different for our Friday Flavor posts this week. With that being said, we’re going to find a recipe that we love that is on the unhealthy side and make it healthy each week. This week: oatmeal craisin cookies.
When it comes to eating clean, everyone makes the excuse that it takes too much work and it doesn’t taste as good. We’re going to prove that that isn’t true. Tiffany is probably one of the few people in the world who loves oatmeal raisin cookies. Because she does most of the cooking, we thought it appropriate that our first try at this would be oatmeal cookies. Thus we bring you oatmeal craisin cookies.
A while back when Tiffany first started eating healthy (as talked about here) and incorporating protein into her diet she loved to make healthy desert recipes. She would take recipes for things like banana bread and cookies and throw some protein in there and make them in a lighter fashion. They were yummy and hit the spot. With one of the biggest sweet tooth’s around, she’s always looking for something sweet. Little did she know, when she found Matt, she would be getting someone with an even bigger sweet tooth.
When we tried the keto diet a while back, we played with making “Fat Bombs” which are just globs full of fat – yummy fat though. They incorporate ingredients like coconut oil and almond butter to create something that is full of fat and is satiating. It was fun to get to try different recipes each week that ranged from fruity to chocolatey.
Now, we aren’t eating keto anymore and we can’t afford to eat 30 grams of fat in the matter of 1 minute, which leads us to this current idea.
We thought this would be a fun challenge to test out our baking (and cooking) skills and creativity to provide something that can help give you an idea for some new healthy recipes! We’ll be making both sweet and savory recipes so don’t expect a dessert every week.
Enough of a background, onto the recipe we go!
Protein Oatmeal Craisin Cookies
Makes 12 cookies
- ¼ cup almond butter
- 2 tbsp coconut oil
- 1 tsp vanilla
- 1 egg
- 2 tbsp brown coconut sugar
- 2 tbsp stevia
- 1 cup rolled oats
- 1 tsp cinnamon
- 1 tsp baking soda
- 60 g protein (we use Level-1 by 1st Phorm as sold here)
- ½ cup dried cranberries
- 2 tbsp almond milk
- Preheat oven to 350 degrees
- In a small bowl, combine oats, cinnamon, baking soda, and protein. Mix well and set aside
- In a larger bowl, combine almond butter, coconut oil, vanilla, egg, and sugars. Mix until well combined.
- Start to mix in dry ingredients.
- Once combined, fold in dried cranberries
- If the mixture is dry, gradually add in almond milk until batter forms
- Spray baking sheets with cooking spray (or use parchment paper)
- Drop by spoonful cookie batter onto baking sheets and place in oven
- Bake for 10-12 minutes or until edges start to brown
As a note, when we made the recipe, we found them to be slightly too dry because we didn’t add enough milk, so make sure to add until the mixture is a dough like consistency. Another thing to note is be sure to watch the oven carefully because a minute or two extra and they’ll be dry. Other than that, enjoy the recipe!
